Easy Eggless Cake Recipe

Ingredients:

Condensed milk  - 200gms or 1/2 tin

Maida flour – 280gms or 2 3/4 cup

Baking powder – 1/2 tsp

Baking soda (soda bicarb) – 1/2 tsp

Icing sugar or normal sugar powdered – 2 tsp 

Butter melted – 1/2 cup or 60 gms

Vanilla essence – 1/2 tsp

Milk – 100 ml

Method:

1. Sieve flour, baking powder, baking soda, powdered sugar or icing sugar, all together 2 to 3 times and keep aside.

2. Pour condensed milk in a bowl. Add the butter, and beat well till smooth.

3. Add the flour spoon by spoon, mixing into the condensed milk mixture.

4. In between, add milk as required if the batter begins to get too stiff.

5.  Stir the mixture in one direction only all the while. This will incorporate more air and make the cake lighter.

6. Once all the flour is used up, beat the batter as above till light (5-7 minutes). 

7. Pour into a greased cake tin. Do not smooth with a spoon etc. If the consistency is right this will not be needed.

8. Bake in a hot oven for 10 mins at 200 degree C. Reduce to 150 degree C  and leave it for next 10 minutes.

9. Poke with a skewer and check. Cool a little. Invert on wire rack. Cool completely before doing icing if any. Or serve warm with tea.

Sprouts Vegetable Salad Recipe

Ingredients:

Green gram sprouts – 1 cup

Chopped Onion – 1

Tomato – 2

Grated carrot – 1

Sliced Cucumber – 1/2 cup

Coriander – to garnish

Salt -to taste

Pepper – as required

Chaat masala – a pinch

Lemon Juice – 1 tsp

Method:

1. Wash and chop tomato, onion, coriander leaves.

2. Peel off the skin and chop the cucumber to fine pieces.

3. Steam cook the sprouts by sprinkling water and adding a pinch of salt.

4. Take a bowl add cucumber, grated carrot, onion, tomato, cooked sprouts, salt, pepper and chaat masala and mix well.

5. Now add the lemon juice and mix well.

6. Garnish with coriander leaves and serve.

This salad is very good for all age group. Since rich in fibre it is good for dieting people, diabetic and cholesterol patients.

Gobi 65 Recipe

Ingredients:

Cauliflower – 1 medium(clean and break into big florettes)

Ginger finely chopped – 1 tsp

Garlic finely chopped – 1/2 tsp

Besan/gram flour – 1/4 cup

Corn flour – 2 tablespoon

Red chilli powder – 1/4 tsp

Oil – 3 tablespoon

Water – little

Milk – 1 tablespoon

Salt-to taste

Method:

1. Boil the florettes for 3-4 minutes in plenty of water, to which add tablespoon of milk.

2. Drain and pat dry on a clean cloth.

3. Make thin batter out of besan flour and 2 tbsp cornflour, adding 1/4 tsp each of ginger and garlic and red chilli powder and salt to taste.

4. Dip the florettes in the batter one by one and deep fry in hot oil.

5. Serve hot with toothpicks or miniforks and chilli,garlic sauce or tomato sauce.

Maida Chips Recipe

Ingredients:

Maida – 2 cups

Jeera – 1 1/2 tsp

Water – as required

Butter/Vanaspathi – 1 tsp

salt – to taste

Oil – to fry

Method:

1. Take a bowl, add maida, butter, salt, jeera, chilli powder and prepare dough adding sufficient water.
(Dough should be that of chappathi dough)

2. Make small equal sized balls with the dough.

3. Now spread the maida balls into thin chappathis and cut it into small pieces.

4. Separate each piece and deep fry in oil.

Since we use maida, it will be sticky and need to be careful while cutting and taking out the pieces.

Do not make very thin chappathis as making pieces will be problem

Easy Maida chips serve as a good snack that can be prepared at home in minutes.

Wheat Coconut Panniyaram Recipe

Ingredients:

Wheat – 1 cup

Raw rice – 1 cup

Graed coconut – 1 cup

Jaggery – 1 cup

Ghee – little

Cardamom – a pinch

Sliced banana -6

Method:

1. Soak wheat and raw rice for 4-5 hrs and grind it along with coconut.

2. Add little water to the jaggery and prepare syrup and add it to the batter.

3. Now add cardamom and mashed banana. Mix well.

4. Now take the paniyaram pan and grease with little ghee and pour the batter and cook in low flame till it becomes golden brown.

Whole wheat paniyaram is good for health and tasty to be served.
